Sorbic acid is an efficient and safe antiseptic and fresh-keeping agent recommended by the International Food and Agriculture Organization and the Health Organization. It is widely used in food, beverage, tobacco, pesticide, cosmetics and other industries. As an unsaturated acid, it can also be used in the resin, perfume and rubber industries.


Corrosion resistance
Sorbic acid (potassium) can effectively inhibit the activity of molds, yeasts and aerobic bacteria. It can also prevent the growth and reproduction of harmful microorganisms such as botulinun, staphylococcus and salmonella. However, it is resistant to anaerobic spores and acidophilic bacteria. Beneficial microorganisms such as Lactobacillus are almost ineffective, and their growth-inhibiting effect is stronger than that of sterilization, so as to effectively extend the storage time of food and maintain the original flavor of the food. Its antiseptic effect is 5-10 times that of similar products, sodium benzoate.

Safety
Sorbic acid (potassium) is a six-carbon fatty acid containing two unsaturated double bonds. Like other fatty acids, sorbic acid can participate in normal metabolism in the human body, and is completely oxidized to produce carbon dioxide and water, leaving no residue in the body. Its toxicity is only 1/2 of table salt and 1/40 of sodium benzoate

Sorbic acid is a very safe preservative. Because the amount of sorbic acid in food is very small, there is no problem of causing acute poisoning. Because sorbic acid can be absorbed and digested by the body, there is no chronic poisoning problem accumulated in the body.

Sorbic acid is also called prickly acid, which is naturally present in the seeds of prickly ash tree. Although sorbic acid used in food is produced by artificial synthesis, its biochemical effect in the human body is exactly the same as that of natural products. Therefore, sorbic acid is not a chemically synthesized food additive. To describe food preservatives as "chemical compounds" is a manifestation of the lack of knowledge about food preservatives. The use of sorbic acid as a "natural food additive" is also unconvincing. In the fragrance industry at home and abroad, the fragrances "synthesized by man-made, whose chemical combination and properties are exactly the same as those of natural substances" are defined as "natural equivalents" or "natural equivalents". According to this definition, sorbic acid should be "equivalent to a natural product".

Stability
Sorbic acid (potassium) is stable in a sealed state, and is easy to absorb water when exposed to moist air, oxidize and change color. Potassium sorbate has good thermal stability and the decomposition temperature is as high as 270oC.

Applications:
Sorbic acid can be used in ordinary foods such as beverages and condiments, and can also be used in many foods where benzoic acid is not allowed, such as meat products, rice noodle products (bread, cake), children's food.
