Aspartame, also known as Aspartan or Aspartan, is a non carbohydrate artificial sweetener with the chemical name L-aspartate L-phenylalanine methyl ester.
Aspartame is a sweetener discovered in the laboratory of a large pharmaceutical factory in 1965. Its chemical structure is aspartyl phenylalanine methyl ester, with a sweetness of about 180-220 times that of sucrose. It has less calories than regular sucrose (1 g of Aspartame has about 4 kcal of heat), and can be used in small amounts to make people feel sweet, to the extent that its calorie content can be ignored. Due to its similarity in sweetness to granulated sugar and a refreshing sensation, it is widely used as a substitute for sucrose in various fields of food. But because high temperatures can cause it to decompose and lose its sweetness, aspartame is not suitable for cooking and hot drinks.
