Maltodextrin (MD) is a polysaccharide food ingredient that is a low conversion product between starch and starch sugar. Amorphous powder with a white or slightly yellowish appearance, without visible impurities to the naked eye, has a special odor, and is not sweet or slightly sweet in taste.
In 1970, Ueberbacher defined maltodextrin as follows: a product made from starch and controlled to hydrolyze with a DE value below 20% is called maltodextrin. The definition of the United States is: carbohydrate products obtained from corn starch raw materials through hydrolysis conversion and spray drying. In China, it is defined as a starch derivative without free starch, which is made from starch or starchy material through enzymatic hydrolysis, refining and spray drying. According to the different DE values, the common product specifications of its series include MD10, MD15, MD20, etc.
The physical properties of maltodextrin are directly related to the DE value of its hydrolysis, so the DE value not only represents the degree of hydrolysis, but also is an important indicator for mastering product characteristics. Generally speaking, the higher the hydrolysis degree and DE value of maltodextrin, the greater the solubility, sweetness, permeability, fermentability, browning reaction, and freezing point decrease of the product; The poorer the organization, viscosity, pigment stability, and crystallinity resistance.
